
Jerbo Cake (Greta Garbo Cake)
For a tray measuring 37 cm x 25 cm
Dough
-
900g flour
-
190g lard
-
225g butter (82% fat)
-
11g fresh yeast
-
150g sugar
-
2 whole eggs
-
3 egg yolks
-
150ml milk
-
1 teaspoon salt
Instructions:

Rub the flour with the lard and butter until the mixture resembles wet sand.

Add the rest of the ingredients and knead for 10 minutes until a smooth dough forms.

Divide the dough into 4 equal parts.
Filling
-
675g plum or apricot jam
-
350g ground walnuts
-
250g sugar
-
15g vanilla sugar
Assembling the Cake

Line a baking tray with parchment paper.

Roll out the first piece of dough and place it on the bottom of the tray.

Spread a layer of jam over the dough and sprinkle with a portion of the walnut-sugar mixture.

Roll out the second layer of dough and place it on top. Repeat the process: jam + walnuts.

Repeat again with the third layer of dough, jam, and walnuts.

Place the final layer of dough on top.

Cover and let the cake rise in a warm place for 30 minutes.
Baking

Preheat the oven to 150°C with ventilation.

Bake for 50–60 minutes, until cooked through and lightly golden.
Chocolate Glaze

300g sugar
-
200g butter (82% fat)
-
100ml water
-
100g cocoa powder
Instructions:

Combine all ingredients in a saucepan.

Heat over low heat and let it simmer for a few minutes.

Pour the hot glaze over the freshly baked cake.
Finishing
Let the cake cool at room temperature overnight.
Cut into pieces the next day and serve.
